SENSATES AND THEIR APPLICATION IN CONSUMER PRODUCTS A. INTRODUCTION There is considerable interest in the use of sensates in consumer products (including pharmaceutical products). When consumed as part of a food or beverage or applied bucally, nasally or dermally, they can deliver cooling, warming, tingling, pungency or other desirable or beneficial sensorial effects to products containing them. Sensates are widely used in consumer products not only because of the interesting organoleptic properties they can deliver, such as cooling, warming, tingling or pungen- cy. Although they are for the most part tasteless and odourless, nevertheless they can also be used to modulate the taste and aroma of consumer products, or even contrib- ute to the perception of other organoleptic effects, such as juiciness, deliciousness, freshness and sweetness. They can also be employed to mask unwanted organoleptic effects, such as bitterness or astringency. They are also employed in dermal applications, such as in cosmetics and toiletries, to provide cooling, warming, and other organoleptic effects, such as soothing, calming and refreshing effects, to the skin or scalp. They can also create a perception of moisturization and hydration. B. SENSATE COMPOUNDS Examples of a novel class of sensate compounds, particularly valued for their cooling effect are selected from the following compounds: 2-(methylthio)-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)propan-1-one; 2-(methylthio)-1-(2-(5-(4-(trifluoromethyl)phenyl)-1H-imidazol-2-yl)piperidin-1- yl)propan-1-one; 2-(ethylthio)-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1- yl)propan-1-one; 2-methyl-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)but-3-en- 1-one; 2-methyl-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)butan-1-one; (R)-2-(methylthio)-1-((R)-2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)propan-1- one; (2S)-2-methyl-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)butan-1-one; 2-methyl-2-(methylthio)-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)propan-1- one; 2,2-dimethyl-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)but-3-en-1-one; 2-(methylthio)-1-(2-(5-(p-tolyl)-1H-imidazol-2-yl)piperidin-1-yl)propan-1-one oxa- late; 1-isopropyl-3,3,5,7-tetramethyloctahydrobenzo[c]isoxazole; 5-(4-fluorophenyl)- 1,3,3,5,7-pentamethyloctahydrobenzo[c]isoxazole (including (3aR,5R,7S,7aR)-5-(4- fluorophenyl)-1,3,3,5,7-pentamethyloctahydrobenzo[c]isoxazole; (3aR,5R,7R,7aR)-5- (4-fluorophenyl)-1,3,3,5,7-pentamethyloctahydrobenzo[c]isoxazole; and (3aR,5R,7S,7aS)-5-(4-fluorophenyl)-1,3,3,5,7-pentamethyloctahydrobenzo [c]isoxazole); and mixtures thereof. Any of the aforementioned sensates are particularly preferred materials that can be used in consumer products in combination with the various ingredients described hereinbelow. Older, but commercially well-known sensates are selected from N-substituted p- menthane carboxamides. Particularly important compounds include N-(4- cyanomethylphenyl) p-menthanecarboxamide, N-(4-sulfamoylphenyl) p- menthane- carboxamide, N-(4-cyanophenyl) p-menthanecarboxamide, N-(4-acetylphenyl) p- menthanecarboxamide, N-(4-hydroxymethylphenyl) p-menthanecarboxamide, N-(3- hydroxy-4- methoxyphenyl) p-menthanecarboxamide, or mixtures thereof. N-(4-cyanomethylphenyl) p-menthanecarboxamide is commercially available from Givaudan under the trade name EverCool™ 180. Other important N-substituted p-menthane carboxamides include menthone glycerol acetal (for example, sold as Frescolat® MGA by Haarmann & Reimer), N-(4- cyanomethylphenyl)-ρ-menthanecarboxamide or N-(4-cyanomethylphenyl)-5-methyl- 2-(1-methylethyl)cyclohexanecarboxamide (for example, commercially available from Givaudan), N-(2-(pyridin-2-yl)ethyl-3-ρ-menthanecarboxamide (for example, com- mercially available from Givaudan), N-(4-sulfamoylphenyl)-ρ-menthanecarboxamide, N-(4-cyanophenyl)-ρ-menthanecarboxamide, N-(4-acetylphenyl)-ρ- menthanecarboxamide, N-(4-hydroxymethylphenyl)-ρ-menthanecarboxamide, N-(3- hydroxy-4-methoxyphenyl)-ρ-menthanecarboxamide, 2-Isopropyl-N,2,3- trimethylbutyramide (for example, known as WS-23); N-Ethyl-ρ-menthane-3- carboxamide (for example, known as WS-3); Ethyl 3-(ρ-menthane-3- carboxamido)acetate (for example, known as WS-5), menthyl lactate (for example, commercially available as Frescolat® ML by Haarmann & Reimer), Menthoxypropane- 1,2-diol (for example, commercially available as Coolant Agent 10 by Takasago Inter- national), ρ-Menthane-3,8-diol (for example, commercially available as PMD38)- Takasago International, Isopulegol (for example, commercially available under the name “Coolact P®” by Takasago International), (1R,2S,5R)-2-isopropyl-5-methyl-N- (2-(pyridyn-2-yl)ethyl)cyclohexane-1-carboxamide (commercially available from Givaudan under the trade name EVERCOOL 190), (1-glyceryl-p-mentane-3- carboxylate), (ethyleneglycol-p-methane-3-carboxylate), (N-t-butyl-p-menthane-3- carboxamide), (N-(4-,ethoxyphenyl)-p-menthane-3-carboxamide), 3-(1- menthoxy)propane-1,2-diol, 3-(1-Menthoxy)-2-methylpropane-1,2-diol, menthyl pyr- rolidone carboxylate) (for example, commercially available as Questice®), (1R,3R,4S)- 3-menthyl-3,6-dioxaheptanoate (for example, commercially available from Firmenich), (1R,2S,5R)-3-menthyl methoxyacetate (for example, commercially available from Firmenich), (1R,2S,5R)-3-menthyl 3,6,9-trioxadecanoate (for example, commercially available from Firmenich), (1R,2S,5R)-menthyl 11-hydroxy-3,6,9-trioxaundecanoate (for example, commercially available from Firmenich), (1R,2S,5R)-3-menthyl (2- hydroxyethoxy)acetate (for example, commercially available from Firmenich), Cubebol (for example, commercially available from Firmenich), 1-[2-hydroxyphenyl]-4-[2- nitrophenyl-]-1,2,3,6-tetrahydropyrimidine-2-one), 4-methyl-3-(1-pyrrolidinyl)-2[5H]- furanone (for example, known as Icilin or AG-3-5), menthyl lactate, menthone glycer- in acetal, L-Monomenthyl succinate, L-monomenthyl glutarate, 3-1-menthoxypropane- 1,2-diol (for example, known as Coolact 10), 2-1-menthoxyethanol (for example, known as Cooltact 5), and mixtures thereof.
